I’ve been doing a lot of baking this season, but I still haven’t gotten around to making those quintessential Christmas cookies. And you know what? It’s a week before Christmas, and let’s face it, it’s not gonna happen. I’m a little too impatient for proper cookie making and decorating anyway. So, my husband came up with the next best thing: frosted graham crackers! (I know, first this chili recipe and now this!)
Let’s back up to all that baking I was doing. A few weeks ago I had an abundance of leftover buttercream frosting in my possession. I mean, like a lot of buttercream. While I would steal a bite here and there, it really needed to be eaten with something. But, I was too lazy for anymore baking. What to my wondering eyes did appear? Graham crackers hidden in the back of the pantry and the husband smiling ear to ear!!! Yep, we just loaded that buttercream onto some graham crackers and had ourselves a tasty treat. No baking. No messy cleanup. It would be even easier if you used canned frosting.
Now, I imagine if you were going for something pretty, or needed to stack your “cookies”, you would need to use royal icing, not buttercream. But this way makes an easy, no-bake dessert that you can dress up for a party or a casual, fun afternoon of “cookie” decorating with the kiddos. I’m totally sold. And the best part? There is still time to make these before Christmas. 🙂
